Growing up in the Pacific Northwest I’m no stranger to the great outdoors. Our family went car camping up and down the Oregon Coast every summer, cooking over the fire every night. There is a great amount of time and dedication that it takes to perfect your bed of coals and a certain intuition to know just when to rotate, flip, and check your food. The energy that you put into making that meal comes through in the flavor, always making it taste a little better than it does at home. Our menu consisted of the typical go-tos of hotdogs, foil-pack dinners, and of course s’mores. Over the years we added cast iron, grill baskets, grills, and camp stoves to our arsenal creating more elaborate, and delicious, meals. What’s wonderful about cooking outside is that you can cook with barely any equipment or you can bring everything, including the kitchen sink! No matter how simple or complicated you make it the meal is always better than the same meal prepared indoors.

Some of the best meals of my life have been made while outdoors, partially because of the dedication that goes into preparation, partially because of the fresh air, but mostly because they’ve all been enjoyed with friends and family. To me, this is what life is about. Enjoying nature, eating good food, and sharing it all with friends old and new.

In 2018 my husband and I purchased our first adventuremobile, and I began cooking more and more out in the open. In March of 2019 we decided to take to the road for a full year, with me cooking my heart out along the way. It didn’t take long for me to find ways to limit the number of dishes to wash. We’ve also met lots of fellow campers and learned about local cuisines. This is what Trailside Table is about, providing products and meal kits designed for the road, or any tiny kitchen, that are as good or better than meals prepared in a large kitchen.
