Mixed Berry Crumble
Perfect Dessert
This recipe uses oil, pancake mix, and maple syrup to provide a vegan friendly recipe with ingredients you don’t necessarily need a cooler for (assuming your berries are fresh and it’s not crazy hot outside!). You can easily sub gluten free pancake mix to make this an all-inclusive dessert everyone will love!

INGREDIENTS
3/4 cup pancake mix, divided
2 to 3 tbsp olive oil
1 to 2 tbsp water
2 oz real maple syrup, divided
3 cups mixed berries, cut to 1/4 - 1/2 inch size
DIRECTIONS
Oil the inside of an 8-inch dutch oven and add the berries (or fruit of your choice) along with 1 oz of maple syrup. Sprinkle with about 1 tbsp of the pancake mix. Stir to combine.
Add the remainder of the pancake mix to a mixing cup and add 1 oz of maple syrup (1 packet) and a couple glugs of olive oil (about 2 to 3 tbsp). Mix and add water a little at a time until a shaggy dough ball forms. Some dry bits are ok.
Break apart the crumble mixture with your fingers and sprinkle it over the fruit.
Bake in a 375 degree oven for 30 to 35 minutes until the fruit is bubbly and the topping is browned and crisp.
NOTE
To cook in a campfire, place the camp oven right next to the hot coals and rotate a quarter turn every 3 to 5 minutes until the fruit is bubbly and the crumble is browned and crisp.
