Campfire Mixed Berry Crumble

A Classic Campfire Dessert.

This recipe is beyond simple to make. It uses the contents of one Trailside Table pancake kit, olive oil, and a little bit of water. That’s it!

Ingredients

  • 3/4 cup pancake mix (a.k.a. 1 Trailside Table package), divided

  • 2 to 3 tbsp olive oil

  • 1 to 2 tbsp water

  • 2 oz real maple syrup (a.k.a. the two syrup packets included in a Trailside Table pancake kit)

  • 3 cups mixed berries, cut into 1/4 to 1/2 inch size

Directions

  1. Oil the inside of an 8-inch dutch oven and add the berries (or fruit of your choice) along with 1 oz (1 packet) of maple syrup. Sprinkle with about 1 tbsp of the pancake mix. Stir to combine.

  2. Add the remainder of the pancake mix to a mixing cup and add 1 oz of maple syrup (1 packet) and a couple glugs of olive oil (about 2 to 3 tbsp). Mix and add water a little at a time until a shaggy dough ball forms. Some dry bits are ok.

  3. Break apart the crumble mixture with your fingers and sprinkle it over the fruit.

  4. Bake in a 375 degree oven for 30 to 35 minutes until the fruit is bubbly and the topping is browned and crisp.

Notes:

  1. To cook in a campfire, place the camp oven right next to the hot coals and rotate a quarter turn every 3 to 5 minutes until the fruit is bubbly and the crumble is browned and crisp. Alternatively, heap coals over the camp oven and check occasionally.
